Presenters from CDC's National Center for Environmental Health will present analyses of data from the National Environmental Assessment Reporting System (NEARS), a national reporting system that captures data from the environmental health component of health departments' foodborne outbreak investigations. These analyses identify substantive differences in food safety practices between establishments that have had bacterial outbreaks and establishments that have had viral outbreaks. For example, establishments that have had bacterial outbreaks have fewer cold holding units than those that have had viral outbreaks. These analyses also identify restaurant policies and practices linked with smaller outbreaks. These data have implications for outbreak investigation and prevention.
